Nettle Gomae

Nettles are an amazing superfood, available in many of our gardens and backyards. This nettle recipe does up the edible weed Japanese style, with a little soy sauce and sesame seeds. 

Ingredients

  • 3 large double handfuls fresh stinging nettle about half a shopping bag
  • 2 Tbsp white sesame seeds
  • soy sauce/tamari or salt

Instructions

  1. Blanch the nettle in boiling water for 30 sec to 1 minute (this eliminates the sting). If you don't have a sieve that fits inside a pot (for cooking pasta), I've been finding tongs very useful. Plunge into cold water and squeeze out water when cool enough to handle.
  2. Toast sesame seeds over medium heat - they will start to brown and smell toasted when ready. You can sprinkle the seeds on the nettle as is, or you can work the sesame in a mortar and pestle and add enough soy sauce/tamari to make a paste.
  3. Eat together and savour the nutritious deliciousness!
