It was so hot this summer that I didn’t want to cook at all. Our apartment offers no shade from the sun and we don’t have air conditioning. The air was often hot and heavy, without a hint of a breeze. So adding to the heat with cooking – no thanks.

One system I came up with to minimize cooking during the day was to soak and then cook a big batch of legume and grain in the evening. While soaking grains and legumes helps the nutrients be more bio-available, the major advantage of soaking in the summer is that it then takes less cooking time. Kept in the fridge, I could take some out through the week as a base for various dishes, from salads to sautes (and theoretically soup, but that heat thing) and mix with a variety of vegetables.  Click to continue reading

Ask any Slovak and they will tell you that bryndzové halušky is the national dish. Potato ‘dumplings’ are smothered in a sheep cheese, rather like soft feta, and topped with a good dose of bacon (don’t forget the drippings!).

The word ‘dumpling’ covers a multitude of meanings. As a child, a dumpling meant a puffy floury ball in soup or stew from my mom or a smooth more condensed drop from my dad.

I knew that dumplings covered everything from won tons to pierogies, but I thought that dumplings had to be boiled. According to Wikipedia, dumplings consist of some sort of dough, often wrapped around a filling, and can be boiled, steamed, or even baked. Well, that’s broad.  Click to continue reading

Slovak Style Egg Spread

Some say that everything is better with butter. With Slovaks, that extends to egg spread.

Yes, butter as a base with egg spread. When I first saw my mother in law making Slovak egg spread, I raised my eyebrows. Butter? But then I tasted it and became a firm fan.

Sometimes egg mixtures can be a spread or a salad, like my recipe 3-Ingredient Egg Salad/Spread. This is definitely a spread, not a salad.

It’s a fast and filling meal to make, whether you don’t want to cook because the weather is still hot or because you’ve got to eat in five minutes.

Butter is making a comeback after being vilified for years, which is great because it tastes amazing. So get in even more butter with Slovak Style Egg Spread!

Slovak Style Egg Spread
 
Ingredients
  • 5 eggs
  • ½ cup (125 ml) butter, softened
  • 1 tsp mustard
  • onion
  • salt
  • pepper
Instructions
  1. Make hardboiled eggs according to your preferred method. I boil them for an undefined amount of time while I forget about them, and then remember - oh, my eggs! Cool in cold water.
  2. When cold enough, peel eggs and chop. Mix with softened butter, mustard, chopped onion (according to taste) and salt and pepper. The amount of salt will depend on whether your butter is salted or not.
  3. Garnish with chopped chives or parsley if desired.
  4. Spread on bread, crackers, flatbread, etc or use as a dip. Enjoy!

Bryndzove (or Feta) Cauliflower

Bryndza, a soft sheep cheese, is a traditional food in Slovakia. It tastes something like feta but is soft. Bryndzove halusky is the classic Slovak dish, little potato gnocchi smothered in byndza and bacon. This version simulates the taste for those who don’t have access to bryndza or don’t have the time to make potato gnocchi.

Ask any Slovak about traditional Slovak foods, and you’ll most likely hear about bryndzove halusky (halushky).

Halusky is usually translated as potato dumplings, but I’ve seen dumpling cover everything from bread-like blobs to Chinese wontons to Slovak potato drops, all exceedingly different.

Bryndza is a soft sheep cheese, tasting something akin to feta, salty and sharp. It’s used to make spreads for bread, fill perogies, or even make soup. It’s most common application is as a sauce over halusky.

Many brands mix sheep and cow milk to make bryndza, but some brands use only sheep milk, and a few even have raw sheep bryndza. To fit in with my probiotic and fermenting theme, bryndza is full of probiotics. There is a study examining which bacteria bryndza contains and their antimicrobial activity.

Sushi, while delicious, can take a long time to make – not so great for a crowd or hungry family. Temaki, sushi hand rolls, is an easy and fast way to serve sushi. Temaki is especially suited to cauliflower sushi because they don’t need to hold themselves together, just roll up and eat!

When I was pregnant with my first, I remember craving the Japanese comfort foods of my childhood, like miso soup, soba noodles, and sushi. I distinctly remember a night in January when all I wanted was watermelon and soba, but neither were to be found.

Zucchini Pizza Frittata

My brother-in-law and his family have been put through the wringer this past year, and it looks like they may be starting the journey all over again. Last year, just after Easter, their five year old youngest son was diagnosed with leukemia. He was in the hospital for six straight weeks before he could come home to visit, my sister in law coming home for a visit once a week. Thus began over a year of hospital stays, chemotherapy, low immune system, and a host of other concerns. My nephew lost weight, lost his hair, but retained water due to the cortisone. They just finished the third intensive block of chemo, and are currently down to weekly checkups.

Cancer puts a strain on the whole family. The worries, the fears. Dad and four other children had to learn to get by without mom holding the fort together. There’s an overarching cloud of concern, running through all aspects of life.
But recently their next youngest son, 12, has been exhibiting some health problems. A couple check ups showed something wasn’t quite right, but it could be this or it could be that. His mom worried about cancer, but what are the chances, right? Well, it looks like he does have cancer, in the lymph system. They are currently doing tests to determine exactly what it is and how to proceed.

Bobette, my sister in law, said that she has been sustained by prayers these last few days. They would appreciate any prayers you could offer for them.

It’s sadly ironic. They live in Austria, the country that hates nuclear power, where everything is available as organic. Gaming is in the foothills of the Alps with clean air and pure water. She avoids plastic and cooks real food. Neither parent smokes, the kids play outside. No cell phones allowed. Why, why two kids with cancer??

Which got me thinking about one of the arguments against universal health care in the States, basically, “I don’t want to have to pay for slobs who don’t take care of themselves.” In other words, why should I, who takes care of myself, pay for the health problems of those who smoke/drink/do drugs/eat unhealthy food/are promiscuous/don’t exercise/etc. Click to continue reading

Is any woman, young or old, immune to a negative perception of their own body at some point? I exclude men, not because they don’t have issues with body image, but because I know little of their body-self relationship; not only have I not talked to many men about this subject, I’m inclined to think they speak less of it in general.

There is, of course, always the question of weight, but body image involves issues like uneven ears, large foreheads, or knobby knees. As a teenager I would have had nose surgery in a second, now the idea is abhorrent to me (although I am convinced it did grow before the rest of me).

But our views about ourselves are not always based on reality. For example, as a teen I always considered myself chubby, even though I was quite active in sports. I don’t really know if I was or not, to be honest, I haven’t looked at pictures from that age in an eon. I was rather laid back about it though and contented myself with dabbing fat off of pizza. Fortunately, I was never tempted to throw up or starve myself. After my first child, I could fit into a pair of shorts from high school and considered myself a skinny minny.
